About the role
Heritage Portfolio are looking for a talented and enthusiastic Commis Chef to join our team based at our Central Production Kitchen in Leith. With an emphasis on fresh, sustainable, made from scratch cooking, our culinary teams execute outstanding catering and event services, from private dining, weddings and corporate clients to exceptional in-house café services.
Under guidance of our Executive Chef and culinary development teams, you will prepare and deliver a range of menus, from deli style retail offers to high end fine dining experiences, all with our overarching ethos of quality, seasonality, provenance and flavour at their heart.
Joining our central production kitchen team will give you the unique opportunity to work across all site within the business. Heritage Portfolio currently run some of Edinburgh's premier cultural destinations including Scottish National Portrait Gallery, Gallery of Modern Art, Holyrood Palace, Edinburgh Castle, The Royal Botanic Gardens, Signet Library, Mansfield Traquair and Musselburgh Racecourse. We have also previously run the Royal Garden Party, the Royal Edinburgh Military Tattoo and the Genesis Scottish Open.
What you'll do
As a Commis Chef your main responsibilities will be
Assist with the preparation and cooking of dishes in line with recipes and kitchen standards.
Prepare ingredients, including washing, peeling, chopping and portioning.
Maintain high standards of food hygiene, cleanliness and kitchen organisation.
Ensure food is stored correctly and in accordance with food safety procedures.
Follow instructions from senior chefs and support the wider kitchen team.
Assist with stock rotation, deliveries and monitoring food supplies.
Help minimise food waste and maintain portion control.
Ensure all kitchen equipment and work areas are cleaned and maintained appropriately.
Contribute to a positive, professional and team-focused working environment.
What you'll bring

Desirable
- Food Safety Level 2 qualification minimum
