Sodexo Live! have a fantastic opportunity for a Head Retail Chef to join our team based from Craven Cottage, the home of Fulham Football Club (FFC)! This is an exciting new role which you can really make your own. Your focus will be to support the Executive Head Chef in all elements of Retail food delivery; we are looking for someone to demonstrate knowledge of current food trends with the ability to bring innovation into the Retail food offers at Craven Cottage & Fulham Pier. You will ensure the timely and efficient preparation and service of all food offers whilst also ensuring accurate costing with the Executive Head chef and Head of Retail.

It's an exciting time to join us and be a part of the eleven-year contract as venue partner for FFC on its new Fulham Pier development. Fulham Pier is becoming one of London’s leading leisure destinations on the banks of the Thames which include restaurants, a Riverside Market, meetings and events spaces, bars and lounges, a basement entertainment venue, a boutique hotel and a spa experience. Sodexo Live! delivers hospitality, retail and non-event day sales and catering at the iconic Craven Cottage.

Role Responsibility

What you’ll do:

  • Understand and demonstrate the vision of the Fulham FC venue partner in all your work activities.
  • Develop and deliver projects set by clients in the agreed timescale in conjunction with the Development Chef.
  • Ensure all menus are photographed and specified to deliver consistency in delivery on the event site.
  • Cost each menu and clearly state the margins delivered.
  • To lead the menu design process and support innovation that drives positive PR, positive client feedback, increased revenues or win new business.
  • Play an active part within the wider Fulham Pier team – contribute to team activities, discussions and decisions to grow and improve the events business.
  • Articulate the service offers for each event, - the food element, the equipment, the flow and the customer experience in conjunction with the Head of Retail.
  • To lead the casual Retail Chef team to ensure the prompt and efficient preparation and service of all meals and breaks at the required time 
  • To comply with all company and client policies, procedures and statutory regulations including Human Resources, site rules, Food Safety, Health & Safety, safe working practices, hygiene, cleanliness, fire and COSHH.

The Ideal Candidate

What you bring:

  • Previous Senior Chef role or Head chef in a similar operation
  • Experience in the delivery of Retail food operations
  • Production kitchen knowledge and/or experience
  • Experience of working with clients in a contract catering environment
  • Staff training experience or qualification
  • Strong management skills with experience of managing large groups
  • Culinary experience within stadia environment
  • A highly collaborative approach 

Package Description

£40,000pa - £45,000pa+ great bonus and benefits package 

Location: Fulham Football Club, London SW6  

Permanent 

Work Pattern –40 hrs pw predominantly Monday – Friday but be prepared to help with match day support
