Executive Head Chef
Job Introduction
We are recruiting for an Executive Head Chef who will oversee the catering and hospitality operations, ensuring the efficient preparation of high-quality food in accordance with company standards and current legislation whilst delivering excellent food and service across the organisation, actively contributing to the development of new food offerings, and ensuring that the head chefs develop their skills and knowledge.
Our Executive Head Chef will plan, organise, co-ordinate, control, motivate, and train those in his/her immediate subordinate team to achieve the business objectives that have been set for and agreed upon. We are looking for someone who can foster a best-in-class culture and to consistently exceed client and customer expectations
AerCap has a split of business between retail sales & hospitality. The hospitality is mainly working lunches and retail is the staff dinning, However, there is significant opportunity to grow both internal business across the unit.

Role Responsibility
- Develop long-term client relationships in line with the ‘clients for life philosophy’ to enhance the retention of current clients and customers, gain referrals for new business and attract new customers
- Actively seek organic growth within the AerCap and support the growth of the Sodexo services where appropriate.
- Understand and maintain the standards and integrity of the service offer and Service Level Agreement at all times.
- Motivate and lead employees to perform their roles to a high standard and in alignment to Sodexo policies and procedures.
- Develop the hospitality offering and the engineering of menus and food innovation for the site
- Ensure stock levels are kept to the agreed establishment targets and supplies are ordered from nominated suppliers and that all goods are correctly and quickly stored away on a first in first out basis and comply with Health and Safety regulations.
- Monitor and maintain consistent methods of food preparation, production, presentation, and service for all meals and ensure they comply with Sodexo’s standard and procedures and meet the agreed specification of the contract.
- Ensure methodical and systematic approach to handling documentation to ensure accurate capturing of data and that financial documentation and accountancy of the unit (and those from suppliers) is accurate and within agreed budgeted levels.
- Conduct regular reviews of current operating costs, margins, controls, and menu costings to ensure Sodexo is achieving optimum profit.
- Comply with all Company & Client policies and procedures, site rules and statutory regulations including Health & Safety, food hygiene, safe working practices, cleanliness, fire and COSHH. This will include your awareness of any specific hazards in your workplace and training of staff
- Ensure that all equipment used, is in safe working order, checked regularly and serviced. Report any faults to management/client, ensure they are rectified and ensure equipment is not used until safe
- Ensure that temperatures of fridges, freezers and hot cupboards/serveries are monitored and recorded in line with Company regulations and the Food Safety Act
- Implement and maintain all Statutory and Company policies and procedures, communicating it to all staff and ensuring full compliance.
- To ensure that all food is prepared with due care and attention, particularly in regards to special dietary requirements: for example, nut, dairy or wheat allergies.
The Ideal Candidate
- Previous experience as an Executive Chef
- Able to demonstrate the development of new food offers
- Intermediate Food Hygiene Certificate
- 706/2 or NVQ2 chef qualification, or equivalent
- literate and numerate
- Ability to achieve and set standards and operate to performance criteria, with particular regard to hygiene
- Ability to work well under pressure
- Ability to work effectively as part of a team
