Craft Development Chef - Munster Region
Job Introduction
We are recruiting for a Craft Development Chef who will:

- provide direction and expertise to the operating area by promoting Sodexo strategies and best business practices to uphold the Company mission and values.
- motivate and lead a high performing culinary team to achieve their objectives and the Sodexo strategy.
- provide excellent customer service, perform the preparation, presentation and service of food and beverages to the client and Sodexo’s satisfaction.
- support Sales Tender process for the region or the wider comapny
- support or lead food mobilisation or demobilisation with in your region or the wider company
- Support and develop the food offer across corporate service platform aligned with Global food platform

Role Responsibility
Accountabilities
- Accountable to build a strong relationship with you regional directors and local management team.
- Responsibility to train and develop the Health, Safety, Food Safety and Environmental Legislation relating to the building portfolio ensuring the statutory requirements are met and all records maintained
- Risk management – minimise risk and maintain profitability
- Strategic and technical support – professional advice to the onsite team, client, and Sodexo.
- Coordinate and direct strategic initiatives within the region.
- Manage and control the services to the agreed specification and to the agreed performance, qualitative and financial targets
- To co-ordinate monthly craft regional forums with full compliance and attendance.
- Look for and implement opportunities to drive Sodexo revenue and labour productivity in the units.
- Plan and check that marketing initiatives are implemented
- Menu development, testing and validating all new recipes working in line with Service operations,
- Purchasing compliancy and product development review in line with service operations
- Attend all National craft forums mandatory unless permission has been given to step out from line manager.
People
- Recruitment and Trade testing of all lead culinary positions within your region.
- Develop your people and ensure succession planning.
- Key input to the performance of your culinary leads by giving input to support the review and appraisal process.
- Manage poor performance
- Instigate and manage fortnightly culinary calls designed to keep business informed on statutory and legal regulations, marketing, and business support.
- Communicate regularly – monthly meetings to culinary lead
- Ensure your team deliver your operation to the service standards agreed in the contract with your client.
- Nurture client relationships to stabilise & develop them for long term partnerships where possible.
Finance
- Develop team to increase the Client and Sodexo’s revenue opportunities i.e., commercial opportunities, labour efficiency and generate the GOP expected within the contract.
- Comply with the unit budgets and forecasts.
- 100% adherence to purchasing compliance and processes
- Organise Training for culinary teams in food cost awareness and waste management activities.
- Ensure tariff prices are correct, that all catering services are costed to the terms of the contract
- Produce weekly & monthly flash reports with accurate data.
Business Improvement
- Be proactive in overcoming barriers to success.
- Provide feedback on how we can improve our performance.
- Networking – keep appraised of best practise within the industry by maintaining contact with professional bodies in other market sectors.
- Market research and validation of what trends and market growth within your region are and report back
- Responsible for driving Continuous Improvement throughout the region
- Identify opportunities for organic growth and new business
- Control all personal costs such as travel, expenses, as agreed with your line manager.
- Comply with all Company and client policies, procedures, and statutory regulations, including human resources, site rules, health and safety, safe working practices, hygiene, cleanliness, fire, COSHH. This will include your awareness of any specific hazards in your workplace
- Assist with all aspects of the preparation of food service areas and presentation of food to the notified standard.
- Promote a friendly working relationship with colleagues.
- Promoting a good company image to customers and guests
- Maybe required to undertake occasional duties outside the normal routine but within the scope of the position and the department’s activities. To assist, as required, at special functions, some of which may occur outside normal working hours.
- To report any incident of accident, fire, theft, loss, damage, and act as may be appropriate or possible.
- Look for and implement opportunities to drive Sodexo revenue and labour productivity in units.
The Ideal Candidate
Essential
- Must have full UK & Ireland driving licence
- City & Guilds or NVQ Level 1/2/3 or equivalent
- Advanced food safety certificate
- Strong level of literacy and numeracy
- Highly effective communication and interpersonal skills
- Clear and effective leadership style
- Ability to analyse problems analytically, develop opportunities and implement innovate solutions/approaches
- Excellent organisational skills and time management
- Computer literacy skills
- Able to demonstrate personal self-development and development of team
- Demonstration of teamwork, implementing initiatives and working on own judgement and decisions
- Change management and performance management experience as with any operation, flexibility is a must.
- Ability to adhere to all health & safety practices
- Strong customer service skills
- High levels of personal hygiene and appearance
- Positive, can-do attitude

Package Description
€50,000 - €55,000 Depending on Experience, plus bonus and a car.
