Senior Sous Chef
Job Introduction

Sodexo Live! has an exciting opportunity for a Senior Sous Chef to be responsible for the effective delivery of food across Fulham FC & Fulham Pier
You will work with the Executive Sous Chef on menu development and standards to deliver exceptional catering experiences.
The Fulham Pier will become the heart of the community and the standard bearer for indulgent experiences, which will attract both Londoner’s and tourists from all over the world!

We have a remarkable selection of food and drink experiences, ranging from, Pop-up bars and pop-up local cuisine, to elegant fine dining experiences.

We offer local theatre, outdoor gigs, jazz clubs, an art gallery, cooking classes, a comedy club, book launches, film nights and water sports, to name but a few. In addition to this we offer educational activities and crèche and soft play facilities. Whether it’s saluting the sun in the morning with riverfront yoga or toasting the night with a magical cocktail we are building a playground for the senses!
MAIN RESPONSIBILITIES
- Responsible for the effective delivery of food across Fulham FC & Fulham Pier, in line with the standards set out by the onsite client and Executive Sous Chef.
- Training and developing all chefs within each department to company standard and that expected of our customers and client.
- The role will also be focused on achieving the KPI’s as outlined by the venue client.
- Purchasing – Controlling good COS across the site
- Staffing – Working within tight labour budgets, high proportion of casual labour
- H&S + Food Safety – Ensuring that all H&S and Food Safety legislation is kept up to date and accurate across site.
- Drive sales, manage volumes and compliance through preferred suppliers and local sourcing where applicable.
- Deliver client tasting sessions for event planning.
- People management of both permanent and fixed brigades across multiple kitchens on site to include effective leadership, recruitment, engagement, training, development, and motivation.
- Legislative and company HSE procedures and standards compliance
- Responsible for SLA
THE IDEAL CANDIDATE
You will be a proactive and empowered Chef with a creative approach to food and a passion for delivering exceptional experiences. You will have proven and extensive knowledge and experience of the premium restaurant sector and/or venues and the sporting market.
You will also have:
- Excellent planning skills
- Experience of managing a team in varying situations
- Ability to communicate at all levels and have excellent presentation skills
- Multi concept / multi cuisine experience and an in-depth knowledge of food
- The flexibility to work 5 over 7 days when needed
- NVQ Level 1,2 & 3 in Culinary Arts or equivalent
- Diploma in “Advanced Food Hygiene”
- Excellent presentation skills
