Executive Head Chef

We are looking for an culinary genius to lead our kitchen team in a premier league football stadium based on the South coast.
WHAT’S THE JOB?
As the Exec Chef, you will work closely with the Divisional Executive Chef & the Senior operations team initially to design & develop all menus for the football season ahead and the conferencing & banqueting facilities.
You will be responsible for setting and creating the specifications, then go onto recruiting, training, and developing the chef team.
You should be an experienced Head Chef or Exec, with a good idea and understanding of current food trends and innovation. Although with some parts still being a hands-on role, you will predominantly be responsible for the ongoing development of both the team and the menus, with 85% of your time spent out of the kitchen.
Role Responsibility
Responsible for all food production across the stadium to include match day restaurants, boxes & 1901 club areas, East Stand Clint restaurant, Dicks Bar Café and all other Catered Events.
Create and develop menus, food purchase specifications and recipes.
Develop food craft on site, and with teams in each catering area.
Develop and monitor food and labour budgets for each department.
Maintain highest professional food quality and sanitation standards.
Ensure all Health & Safety areas are kept to Sodexo standards
The Ideal Candidate
The right candidate will be an existing Head or Exec Chef who is used to a busy kitchen environment, ideally managed a high-volume site in the past, have a good knowledge of ethical suppliers and able to cost menus successfully. You will need to have experience with developing teams, training and nurturing chefs and understanding operational flows.
Other attributes would include:
- Great attention to detail and experience with menu development.
- A passion for maintaining standards and training.
- A genuine love for high quality ingredients and food innovation.
