Executive Chef

Job Introduction

As an Executive Head Chef at Sodexo, University of Galway, you are not only a culinary expert but also a leader in delivering exceptional hospitality experiences. Your role is pivotal in ensuring the efficient preparation of high-quality food, aligning with company standards and regulations. You will lead a dynamic team to exceed client expectations and contribute towards the development of innovative food offers.

What you’ll do:
  • Lead the delivery and production of quality food for the contract, overseeing 1 kitchen and 3 outlets serving over 16,000 students and staff.
  • Support and develop Small and Medium-sized Enterprises aligned with the contract.
  • Actively seek organic growth opportunities within the University of Galway and support the growth of the Universities Division where applicable.
  • Provide coaching and training to the chef brigade to maintain a high-quality service.
  • Develop hospitality offerings and engineer menus using Recipe Online & DRIVE.
  • Ensure compliance with accountancy, documentation, and administration procedures, completing necessary weekly returns accurately and on time.
  • Control costs, including labour and expenses, within budgeted levels agreed between the Client and Sodexo.
  • Plan, cost, and document menus across the business.
  • Monitor stock levels and order supplies from nominated suppliers.
  • Maximise profitable sales by introducing and maintaining food service brands.
  • Maintain consistent methods of food preparation, production, and presentation, ensuring compliance with Sodexo’s standards and procedures.
  • Comply with Company & Client policies and procedures, including Health & Safety and food hygiene regulations.
  • Maintain equipment in safe working order and report any faults promptly.
  • Ensure prompt and efficient preparation and service of all meals, meeting agreed standards and customer satisfaction.
  • Develop long-term client relationships to enhance client retention and attract new business.

What you bring:
  • Previous experience as an Executive Chef.
  • Demonstrated ability to develop new food offers.
  • Intermediate Food Hygiene Certificate.
  • 706/2 or NVQ2 chef qualification, or equivalent.
  • Literacy and numeracy skills.
  • Ability to achieve and set standards, particularly regarding hygiene.
  • Capacity to work well under pressure and as part of a team.
  • Flexible approach to role and self-motivation.
  • Innovation and creativity in culinary practices.
  • Strong interpersonal and communication skills.
  • Good time management and organisational abilities.
