Deputy Executive Chef

Job Introduction

We have an exciting opportunity for a Deputy Executive Chef to manage the kitchen operation across both the City Campus and School of Management in the absence of the Executive Chef. In this role you will lead a brigade of chefs and back of house support teams and manage all aspects of planning, preparation, production and presentation of food delivered across the university, including hospitality and special event catering. 

Role Responsibility

  • Develop menus across the business, ensuring they are in line with ROL ingredients or specific to business type & budget
  • Deliver food production service across the business whilst managing labour costs in line with budget
  • Ensure adherence to purchasing in line with company policy and budget
  • Deliver mandatory and legislative training as well as development training
  • Ensure compliance with trading procedures and audit achievements
  • Support the team to ensure Safeguard audits achieve a green pass status
  • Ensure that all Food Safety, Health & Safety & company standards are adhered to
  • Assist in the preparation of financial data / budgets, drive & deliver financial results within a given budget / financial criteria

The Ideal Candidate

  • Previous experience as a senior chef, teamed with excellent craft skills
  • Experience of leading a brigade of chefs
  • Excellent communication skills
  • Experience of working within a compliance environment
  • Industry acumen and knowledge of external catering developments and innovations
  • Personal innovation and passion for quality food
