Production Food Manager

Heritage Portfolio have a fantastic opportunity for a Food Production Manager to join our exceptionally talented team in Edinburgh.
Working from our central kitchens, you will manage the entire end to end food production process – goods in, food production, dispatch, and logistics. You will manage multiple production requirements with great efficiency to allow our chefs to create and deliver their exceptional dishes and the best of the local culinary culture to our clients.

Role Responsibility
You will:
- Review and implement new production process’, meeting financial objectives and operational requirements
- Work with development lead to define menu specs and manage the delivery of food items to the agreed standard
- Determine production plans, resources and raw materials, through monthly forecast of food volumes
- Manage ingredient order process and food stock volumes
- Managing supply chain through correct procurement channels
- Lead the H&S process within our production facilities, responsible for a safe environment and working practice of our team
- Manage the PPM process for our production facilities
- Ensure sustainable production, managing waste, reducing utilities and ensuring production volumes match the food forecast requirements
- Manage the logistics department ensuring on time dispatch and transportation of all food items and safe working practice within driver team.
The Ideal Candidate
You will have previous relevant experience operating within food production facility and large kitchen environment. You will be comfortable managing a large team of people with varying levels of seniority. Above all you will have the ability to consistently deliver food quality.
You will also have:
- Previous accountability for managing a P&L
- Previous experience of managing the allergen information and dietary specs within the food production forecast, ensuring segregation requirements are met and records kept
- Forecasting experience
- IOSH Managing Safe
- CIEH Level 3
