Lead Chef at Heritage Portfolio Central Kitchen & Events

Job Introduction

We currently have an exciting opportunity to join our amazing team to deliver a world class guest experience. We are looking for a passionate, enthusiastic and motivated individual who can demonstrate and help to maintain high levels of service that consistently exceeds the expectations of our clients.

Working in our Central Production Kitchen at North Fort Street in Edinburgh as well as at events across our various venues, you will operate and control the smooth running of the kitchen and assist kitchen management in guidance and development of junior kitchen members.

The hours will be around 40+ per week, with evening and weekend working involved in the role. Part time applications will also be considered.

The ideal start for this role will be mid-March 2022

Role Responsibility

  • To understand and demonstrate the vision of the Heritage Portfolio ethos
  • To make sure dishes produced match the specification for events following any tasting notes and additions to achieve consistency in event delivery
  • To articulate the food offer for each event - the food element, the equipment, the flow and the customer experience
  • To always work within the financial parameters of the business.
  • To be organised in kitchen production methods on a day to day basis.
  • Work with the Head Chef and Senior Sous Chef, to manage casual labour in the kitchen operation
  • To ensure that all food is prepared with due care and attention, particularly regarding customers’ special dietary requirements and in line with allergen legislation
  • To follow site waste streaming, recycling policies and objectives.
  • To support, and work in conjunction with, the event managers both in the North Fort St CPU and in Event locations to build mutually beneficial relationships within the business
  • To comply with all company and client policies, procedures and statutory regulations including Human Resources, site rules, Food Safety, Health & Safety, safe working practices, hygiene, cleanliness, fire and COSHH. This will include your awareness of any specific hazards in your workplace
  • To Participate in any necessary training and team meetings as required to complete job responsibilities
  • Take responsibility for areas of designated responsibility 
  • Report incidents or accidents, fire, theft, loss, damage, unfit food, or other irregularities and take such action as may be appropriate.
