Fine Dining & Boxes Operations Manager

Job Introduction

We are recruiting a Fine Dining & Boxes Operations Manager to be based at Ascot Racecourse. The successful candidate will manage the food and beverage operation within the Fine Dining department and be responsible for up to 30 restaurants during race days and events. The Fine Dining & Boxes Operations Manager will support the Head of Fine Dining and Boxes to maximise the profitability of the £6,000,000 department and work closely with the wider operations team to share best practice.

Role Responsibility

  • Identify profitable growth opportunities through innovation and sharing of best practices
  • Manage both internal and external client expectations
  • Ensure the operational accounts are performing within the agreed KPIs at all times to meet Sodexo’s commitments
  • Ensure that clients receive best in class service delivered within contractual terms and in a cost-effective manner
  • Produce, develop and implement training initiatives in conjunction with the onsite training department
  • Control and maintain all fine dining table plans with client sales team
  • Ensure that all operational areas fully comply with Sodexo’s polices on Food Safety, Health & Safety and Allergens
  • Work with the Head of Fine Dining and Boxes to ensure all costs and expenditure are controlled in line with budget
  • Work with cellar teams on operational days to ensure that all stocking policies are maintained and stock is effectively secured
  • Build and maintain positive relationships with all client teams including but not limited to sales, facilities, marketing and sponsorship
  • Manage any customer complaints or issues in a pro-active manner and put action plans in place to rectify these
  • Manage and develop the Assistant Fine Dining and Boxes Manager.

The Ideal Candidate

Essential

  • Operational knowledge, skills and experience
  • Strong relationship building skills
  • Excellent communication skills at all levels, internally and externally
  • Resilience to manage multiple tasks and prioritise their importance
  • Self-motivated and able to work on own initiative within a team environment
  • Ability to interpret and utilise financial and commercial information
  • Experienced in using Microsoft Office
  • Good standard of literacy and numeracy

Desirable

  • IOSH managing safely qualification
  • CIEH Level 3 qualification

Package Description

Up to £44,000 + bonus + flexible benefit fund
