This is a great opportunity for an individual to join us as an Executive Head Chef in for multiple sites in Dublin. The Executive Head Chef will manage two chef managers and a Head Chef as well as kitchen brigades across 3 client’s sites in Dublin. Our ideal candidate will be passionate about providing a high quality food, have a strong business acumen and great leadership skills.

Role Responsibility

  • Maximise profitable sales by the introduction and maintenance of food offers across the site
  • Work with the Head Chef, Chef Managers and Business Manager across client’s Dublin sites, to ensure that high standards of food are served daily
  • Monitor and maintain consistent methods of food preparation, production, presentation and service for all services and ensure they comply with Sodexo Food Safety standards, meeting the specifications within the contract.
  • Ensure that Sodexo allergen policy is enforced and communicated within the catering team.
  • Control costs such as labour, expenses, food in line with budget. Review rota’s regularly to ensure efficiency is in place across the catering operation.
  • Conduct regular reviews of current operating costs, margins, controls and menu costs to ensure that Sodexo is achieving optimum profit.
  • Comply with all company health and safety procedures, site rules and statutory regulations including Health and Safety, Food Hygiene, Safe working Practices, COSHH, Fire.
  • Ensure that equipment used is in safe working order and that the necessary procedures are in place should this not be the case.
  • To report and take positive action regarding customer comments or complaints, liaising with Account Manager/Area Support Manager to ensure these are kept to a minimum and rectified in a short space of time.
  • To take action for any incidents of unfit food, damage, theft, loss or fire, reporting to relevant personnel within organisation.
  • To ensure that correct procedures are in place regarding temperature checks on fridges, freezers, ovens and hot cupboards in line with company regulations and the Food Safety Act.
  • To establish and maintain the standards and integrity of the service offer and SLA’s at all times.
  • Manage the back of house team, performing regular performance reviews and takings positive action where needed with training and development.
  • Responsible for ensuring the effective delivery of all hospitality requirements, evaluate the offering on a continuous basis and introduce new offers and products in line with market trends.
  • To develop and grow strong relationships with individuals at all levels within the company and client organisation.
  • Actively seek and identify opportunities for business growth within the contract and surrounding markets. 

The Ideal Candidate

  • Previous experience as a Head Chef of a medium catering site
  • Experience in Sodexo policies, procedures and systems is desirable though not essential as full training will be given
  • Demonstrate experience of managing teams of staff – communication, HR, values, ethos, interpersonal skills
  • Experience in managing difficult situations either team or client led
  • Good organisational skills, and time management essential due to size of operation on site
  • Flexible approach to role
  • Self-motivated with the proven ability to work well under pressure
