Job Introduction

We have an exciting opportunity for a talented Sous Chef to develop their culinary skills working for a world class University. University College London (UCL) is a high profile University and as Sous Chef, you will support the Head Chef to lead catering operation for the main student refectory in the Bloomsbury Campus, ensuring the highest standards of service to our customers. With excellent craft skills and flexibility to produce a range of requirements, you will ensure the efficient preparation of fresh quality food.

 

Role Responsibility

  • Lead the preparation and delivery of quality food for up to 1,000 students in the student refectory
  • Supervise a team of 5 Chef De Parties, offering developing and coaching as required to ensure consistent service levels
  • Ensure food provided is to the correct standard and as the service offer.
  • Ensure all food is prepared correctly and in particular in respect of dietary requirements and allergens.
  • Support the Head Chef with menu writing and food development
  • Order and control stock levels and administration
  • Manage all aspects of Health & Safety and Food Hygiene
  • Ensure financial documentation, costings and accountancy of the unit (and those from suppliers) is accurate and within agreed budgeted levels
     

The Ideal Candidate

  • Previous experience in a Sous Chef role, teamed with excellent craft skills
  • Industry acumen and knowledge of external catering developments and innovations
  • Good communication skills and ability to communicate at all levels
  • Good financial awareness
  • Personal innovation and passion for quality food
  • Experience working in a standards/compliance environment
