HMP YOI Bronzefield is an all female prison that can hold up to 527 women.

As Chef reporting to the catering manager, you will perform all catering duties as per agreed standards, budgets & compliance with all catering    You will audit as per food standards & Health & safety regulations,

You'll provide purposeful activity within the prison catering department for residents in our care.  You'll be  overseeing, supervising & training prisoners in their work in the prison kitchen.

 

Role Responsibility

  • Ensure the delivery of catering provisions & mandatory paperwork as per contractual Agreement. (NOMS PSI 44/2010)
  • instruct, supervise & oversee the daily workload of prisoners.
  • Ensure meal production & timescales are met.
  • Manage, control & maintain all aspects of security within the prison, ensuring all prison policies, regulations, requirements & procedures are adhered to.
  • Ensure all food is prepared & handled in accordance with the SJS food safety manual & any other relevant audits & guidelines.
  • Help maintain efficient & secure systems for the receipt, storage & issue of foods & provisions & maintain documents related with these systems.
  • Ensure all requests for maintenance of plant equipment/faults are processed efficiently & correctly.
  • Ensue kitchen prisoners comply with cleaning procedures & stock rotation.

The Ideal Candidate

  • Proven track record in a similar catering environment with experience in bulk catering &/or catering for large numbers of people, with a good basic understanding of catering.
  • Qualifications in catering i.e: City’s & Guilds, NVQ & Food Hygiene.
  • Be able to work with a limited budget & have a good catering financial awareness.
  • Experience in supervising people & good communication skills with a positive attitude - able to work as part of a multi disciplinary team.
  • Resourcefulness (capable of taking the initiative and overcoming problems & challenges).

Desirable

  • Qualifications in special diets & Nutrition, Health & safety & Haccp.

 

 

Package Description
